Hot & Cold: A Perfect Salad for Summer in Scotland

So it’s summer in Scotland – not that you would really know it with all this rain. So I decided to cheer my kitchen and my tummy up and make a beautiful, colourful salad packed with fresh vegetables and warming goats cheese.

This dish also helpfully used up most of the vegetables which were going out of date in my kitchen which can sometimes seem like a chore, but when you get to eat something like this at the end it is rather satisfying! So I hope you like it and please post below if you enjoy it.

Cold Ingredients:

  • Beets
  • Onions
  • Lettuce
  • Tomatoes
  • Olive oil & balsamic vinaigrette

Hot Ingredients:

  • Carrots
  • Asparagus
  • Sweet potato
  • Goats cheese

First, put the “hot” ingredients into the oven- I did asparagus, carrots, and sweet potatoes for 20 minutes at 200 degrees.

Next, cut up the cold ingredients to your liking and put them in a mixing bowl.

Cut a thin slice of goats cheese and put it in a simmering pan with a little bit of olive oil.

Mix the hot ingredients into the cold ingredients and add the hot cheese on top! Finish off with a bit of olive oil and balsamic and you’re all set!
